surprisingly we don't have that many cons where i live! i can't really pick out of experience, bc the only 2 cons i ever do are by lottery, and half fcfs and half lottery (respectively). a few other big name cons in this area are fcfs and they are nearly impossible due to high rebooking rates.
lottery is the most fair and allows for a diverse rotation of artists, but that's also its biggest drawback considering you're unsure if you'll be at the same event year by year. if you lose in the lottery you need to fall back on friends who are generous enough to share. im like a fire emblem unit where the worst stat is luck........... so i beg on my knees rely on my friends to share for practically all of my cons.
fcfs is on the other hand favours those with a good internet speed, it is unfavorable (i have poor internet so i could never win this way, i wouldnt personally vouch for fcfs). jury would be nice if you're confident in your art skills, i think my art is at a good enough level now that i should fare alright before a jury (well i sure hope so, that my art isn't shit after drawing for 10+ years HAHAHA). on the other hand ive heard of juries favoring particular art styles and it could just be hearsay (artists talk), but any kind of selection that involves human judgement is bound to have biases ofc.
